When evaluating the summary of hours from JIRA Portfolio the hours remaining add up to a considerable higher number than the numbers that show when I manually go into each story and add up the remaining hours. I've cleared my Cache as I believe Atlassian has said this sometimes can be an issue but if others have experienced this please advise.

I checked internally and I could find that you raised a ticket for the support and it was answered there.
I'm posting the answer here, so others can use it.
Using example with issue
If you select the issue FPDSC-1047 estimation, you will see 81+90.
81 is the sum of all sub-tasks, 90 is the number of hours associated to the issue FPDSC-1047.
If you open the issue FPDSC-1047, you will see that this issue have no estimation in hours, but 15 story points.
Checking your plan issue source, 1 Story point = 6 hours, so the issue FPDSC-1047 have 90 hours estimated.
