Add leaves for a team member and track his individual capacity for the sprint

I want to add leaves for a particular team member.

I want to get his individual capacity for a sprint 

Then assign stories for that person and track how much capacity is left to assigned 

can we do this

I'd like to start my answer by stating that Agile is about measuring team velocity and results (e.g. how fast can we collectively get this story to meet definition of done).  So tracking at the individual level goes against the principles of Agile ways of working.

Having stated that, if you're looking to track at the individual level  you would need to enforce work logging.  You can change your scrum board Estimate settings to be based upon Original Time Estimate instead of story points.  Each issue would then use the Original Estimate as part of planning to determine number of hours that story will take. For example... In a 2-week sprint, each team member would have an aggregate of 60-80 hours (depending upon agreed upon time team members spend on administrative overhead).  You could use a 2-dimensional gadget on a dashboard illustrating assignee vs original estimate to view the estimates per user by gadget for a given sprint to see who is under/over utilized.

As stories are worked, team members would track actual time by way of work logs.

Actually I want to do sprint capacity planning on individual level. So, I need this . We are doing the logging of hours as you mentioned. If we can do capacity planning with this, it will eliminate using excel sheets. Is there any other way of doing capacity planning

I forgot that worklogs are difficult to report against natively because Jira gadgets don't support reporting by Time Spent.  I've done some work before with Rich Filters which will allow extending dashboards to report against this type of stuff.  Otherwise, you'll probably want a marketplace app like tempo. 

Unfortunately, outside of changing your board settings >> Estimate, Jira does not provide a lot of capability here.  Like I said above, it's designed based upon Agile best practices which is focused on the team over the individual.

You may consider Team Planner - Resource Planning and Capacity Planning app which allows you and your team members to add sick leaves/day offs and to track the work of your team during, for example, a sprint.

We don't yet have functionality that would one-to-one tell you how much someone can take on a sprint, but in a more visual way, you can get that overview. We are constantly working to improve our applications and this feature may be improved in the future.
