Why are Rolled-up Estimates not the same as the Remaining Hours shown in Progress (hours)?
I read from here https://support.atlassian.com/jira-software-cloud/docs/track-progress-using-estimates-in-advanced-roadmaps/ that values may be inconsistent between rolled-up estimates and progress bar hours. But why is that? And in this case, which will be more accurate?

on the Jira Data Center documentation it seems to me a bit more clearly.
From my point of view it can be due to unestimated issues:
Any unestimated issues may impact the accuracy of your progress. If you've enabled rolled-up values in a plan, you may see inconsistent values between rolled-up estimates of a parent issue and the values in the progress bar.
Which value is more accurate I'd suggest to test out on a few plans. It should show clearly when comparing a few plans.
