We are currently trialing Portfolio, one odd thing I've noticed is that even though my issue sources are set to the correct projects for my teams, they dont seem to be automatically filling the teams field. Some are, some arent, majority arent.

There's a few reasons why an issue won't be assigned to a team.
First of all, issues need estimates in ordered to be scheduled, which should assign them to a team. Make sure you assign estimates to your issues.
Your team members also need to have the correct availability and capacity in order for the team to be assigned. You can see more information on that in the docs here. You might want to look at the capacity per team member to see which members are available or not. See the docs here for more information on how to do that.
