How to parse out a comma delimited text field into multiple custom fields

We are using the User Profile plugin to import the data into custom profile field to be displayed in the user's profile in Jira and to keep the information in sync. The mapping has been set up and is working fine; however, the Notes field in LDAP contains certain information that needs to be brought over into Jira. As a best practice the request was made to take this information and add it to separate fields within AD but they are not willing to do that.  Is there a way to take the information from the comma delimited "Notes" text field and parse it out into separate custom fields?  I know I would need to create a listner to update the field if it changes as well.
