how to get all the issues from a project with jira rest api?

Replace "assignee=fred" with "project=XYZ"
How many issues are there? How fast do you expect it to grow? Why are you wanting to pull all of the issues from a project via REST? REST is...uh....slow. If you're wanting to do some reporting solution then I'd look elsewhere.
