We have several very old projects that are still in use. We'd like to bulk archive issues that were closed prior to 2023. Is this possible or can we only archive one issue at a time?

I can confirm Atlassian provides the Archive issue(s) by issue ID/key Rest API that can be used to archive up to 1000 issues per request, and you could use this to write a script to bulk archive issues in old projects.
This API can only be used, however, if your Jira Cloud instance is on the Enterprise or Premium plan.
You could use any automation app inside the marketplace to call this API, such as ScriptRunner for Jira Cloud or PowerScripts or Automation for Jira to write a script to call this API.
Atlassian themselves have written a guide here on how to use Automation for Jira to bulk archive issues that you may also find useful.
As a note, I work for the vendor that makes ScriptRunner, but you can call the Rest API using any approach or app to meet your requirements.

We also have Script Runner however I'm the first to admit my SR skills are very rusty. Any assistance or suggestions you can give would be greatly appreciated!
