how do i stop these invite emails being sent to people that maybe CC'd on an email when i include my service desk e-mail for tracking

You can not stop people that you have included in your main from, or asking them to join your site from responding to it.
Theres no way to stop an invite to my service desk just because i BCC'd? theres no off switch?
