We have several Vendors we work and collaborate with in refining our product and they need access to be able to see some of our documents that exist on our confluence site. Is it possible to grant access for those individuals?

You can grant them access and use page restrictions to limit visibility of pages.

The first I would request is to check your Confluence Cloud plan (Premium and Enterprise).
