I want to add a Task to a story, but can only add SubTasks and link Tasks.

Yes. By design, Tasks are a separate issue type so they are wholly independent of user stories, but as you mentioned can be linked. SubTasks on the other hand are children of other issue types (user stories, tasks, bugs, etc).
Could you provide a little more detail about what you're trying to accomplish so we can understand the problem you're trying to solve?

Actually, that question does have the right answer, but it's missing a load of context and there's no explanation of the underlying problem.
The short answer is, as Dave said
Use the "add sub-task link in the 'more' or 'tools' menu on your Story"
However, the context here is that this can only add issues that are of the type "sub-task" and that gets a bit complex.
If you are using a team-managed project, then you can only have one issue-type that is a sub-task, and it's called "sub-task", so, yes, you are stuck there.
If you are in a company-managed project, then you can add many issue types that you class as sub-task, and you can name one of them "Task" if you want. But only if you don't already have another issue type already called "Task"
So, first, look at the type of project you ware in - it's at the bottom left hand corner of the project screens. You can't do anything with one of these.
Second, look at your company-managed project's "issue type scheme" - that will need "Task" adding to it to enable your sub-task type called Task
Third, your admins may need to create the issue type for you, possibly having to rename existing "Task" to something else.

first thanks for your answers and sorry for the late comment.
Finally i want to have an Issuetype like an EPIC to put tasks in a "folder".
In my project, we are using the EPIC to handle different GoLive scenarios, so this doesnt fit with the intention to use an EPIC as folder for a process or programm/development in this project.
Is there an option to "copy" the issuetype "EPIC"? I didnt find it.

No, there's only one issue type that acts as an Epic.
If you have Advanced Roadmaps though (a function of premium), you can create other issue types to act as holding issues like that though.
The 3-dot menu "Move" option allows you to do this by leaving issue in the same project, change it to a SubTask, and then select the required Parent issue for it. Just did it myself on Jira Cloud, Team managed.
