Removing done issues from rolled up estimate

We have Sprints and Epics.

We would like to see the rolled-up estimates of the open and in progress issues in an Epic in a Sprint.

The rolled-up estimate also counts the Done issues in the Epic. 

How does one remove done issues from the rolled-up estimate?

You could probably do that with an Automation for Jira rule and store the result in a custom field.  Please look here for some ideas to get you started:
