I am (trying to) use JIRA roadmap. I have stories assigned to sprints. Is there a way that I can automatically update the beginning/end dates of an epic on a roadmap based on the dates of the sprint?

You could do that with Automation for Jira, updating the epics based upon the Sprint the children are in. (Or, go the other direction and update the Epic based upon children being added to a sprint.)
