in Next Gen projects , we can't add New fields (Epic Status) to Screen.

Alternatively, You can choose epic workflow status in "Roadmaps" .

I have managed to remove the Done Epics from the pane by having the JIRA automation changing the status instead for me doing it manually. I've done the following:

Create an automation to close the Epics when all child issues are completed. I've used the template provided by JIRA.
I have put back in review the Epic and 1 issue, then moved back the issue to done to trigger the automation.
In the roadmap tab, ensure that the Epic is not planned to end later than the end date. The Epic will show until the planned end date is over or not marked as done.
Stil in the roadmap tab, make sure that the Epic is collapsed (otherwise it seems that the warnings are not displayed), then check for warnings or dependencies. I've experienced that if an issue is linked to an unreleased Fix Version or linked to a dependent story still ongoing, then it will still show up. Also make sure that there is no issues with end date after the Epic's end date.

Also, I think that there was a feature released to better manage done issues if you're using a Kanban board with sprints disabled.

Some time after the original posts (in 2021) Atlassian made an update to remove the Mark as Done option for Epics, and changed to basing their display in that panel off the Status Category of the Status field for the Epic.

Statuses are assigned to categories:

To Do - gray

In Progress - blue

Done - green

Epics assigned a done/green status should be automatically hidden from the Epics panel.

However, there was a bug raised yesterday that this was broken. Refer to

It is marked as Closed/Fixed The fix may not yet have deployed to your system.

If you continue to see the "done" Epics in the panel, and have confirmed that those Epics are assigned a done/green status, you should reach out to Atlassian support directly.
