How can I fix column width in new tables?

Question

I've created a table to track teams availability (things like Annual leave / WFH) and want the columns to be a set fixed width so dates don't wrap.  I can't figure out where this formatting sits in the new table build.  I'm missing the Fixed / responsive options.

In edit mode it looks fine

Not so great once published

The reason you're missing the fixed/responsive option is because the new editor doesn't have the capability just yet. Here's a thread that covers the same topic at length.
