In my JIRA service Management JIRA tickets when created getting assign to Project lead, I want to remove that and keep ticket in unassigned status to do it Manually. Please suggest setting to do so.

In your Project > Project Settings > Details > Default assignee - update it to unassigned

Go to Project Settings > Project Details. There you should be able to change who it is assigned to as the default at the bottom of the page.
