Is it possible to track different times/ durations on a task for multiple people but against the same task?

You can view the worklogs associated with the relevant issue by navigating to the 'Worklog' tab in the Activity section of the issue view in Jira. This will display the worklogs added by each user. However, if you need a more detailed analysis and are open to using a third-party application from the Atlassian Marketplace, I recommend considering WorklogPRO. This tool enables in-depth analysis of worklogs, allowing you to group and filter the worklogs by various criteria directly in the issue view by dragging and dropping columns for a more comprehensive understanding of the data.

It is free up to 10 users. With WorklogPRO’s attribute feature, you can add additional information to the worklog and group worklogs by these attributes as I mentioned earlier. If you want to track the amount of time spent on travel or the distance in terms of time (e.g., travel duration), then creating and using the duration type attribute would be suitable. This allows users to enter travel time in a standardized format (e.g., week, days,hours and minutes) while entering worklog on the dialog.

For detailed worklog reporting if you would be interested in a mktplace app, you may want to try out our add-on.

Is this for Jira Product Discovery or Jira?
You would like to achieve something where you set a time goal for different people in the same task?
If it is possible, I think you would need an app like Tempo. Please check out their product documentation here https://help.tempo.io/planner/latest/resource-planning
The alternative for the standard functionality would be to have subtasks assigned to different people.
