When I go to the fields list (I have JPD standard version), I cannot see any system fields unless I already have them in the fields list.
For example, I hid the "goals" system field, but now I can't unhide it.
How to do I see all available system fields in JDP as I do global Jira fields and fields created specifically for my JDP project?

To hide a field, you click the eyeball icon to hide it, but once it's hidden, you never see it again.
Example: the Assignee field is an @ people field, tagged as a system type field. At the very, very bottom, there is an eyeball icon that lets you hide a field.
Once that icon is clicked, the field disappears from the list and I can't unhide it.
Question 1: Is there a list of out of the box system fields for JPD? I haven't been able to lay my hands on them.
Question2: If you hide a field, using the eyeball icon, how do I see what fields are hidden so that I can toggle them back to visible?
When I click the Global Fields button, I have to know the name of the field to find it.

As for "re-enabling" fields you've hidden...
I just tested this in my instance. I hid the "Atlas project" field. After doing so, the record for the field still existed in the Fields list (it was just grayed out). I was able to click the gear icon and the button (at the bottom) that was previously labeled "Hide" was now labeled "Show". Clicking that button re-enables the field within the project.

What do you mean when you say you "hid" the goals system field? How did you "hide" it?
You can control the global fields available within a JPD project by navigating to Settings -> Products -> Jira Product Discovery -> Global fields.
