After installing the plugin I can't add any insights -- it keeps on telling me that "We could't find any projects, please login to your Jira site and refresh the page" -- even if I am clicking on the plugin on the Jira site itself, with the JPD project opened! What can be off and how can I troubleshoot and fix this?

I would open a ticket about this so that Atlassian can have a look at your site, https://support.atlassian.com/contact/ . I don't see anything on StatusPage about any issues in Jira Product Discovery so I wonder if it is something specific to your site / configuration, which only the service desk can really help with.

Sure, I will do that, but we have a super generic setup, so this could be something that others also ran into and could be some setting around the projects that could solve this.
I will make sure to share anything I learn from the support team here as well to help others.

The root cause ended up extensions being blocked centrally via our IT. Strangely enough it did not result in us being unable to install the extension, but it not being able to communicate over the network. Adding it to the whitelist of allowed extensions solved it.
