using Atlassian for creating test documentation

Can anybody point to documentation or articles describing options for creating test plans and test cases in Confluence and or/JIRA?

Welcome to the Atlassian community.

Jira itself is not really a documentation tool. It is a work management tool. There are third party apps available that enhance Jira so that you can use it to track Test Cases and group Test Cases into plans. You can find those in the Atlassian Marketplace:
