for my experience, you can install confluence in 30minutes (+ 15m for each extra nodes in case of data center instance). It depends from your knowledge about installation process.

It depends on your configuration, on my experience if you're going without cluster setup I think it may need 30min to 2 hrs. again depends on the configuration such as Proxy setup, URL redirection, database configuration etc.
