The keyboard shortcuts are changing in confluence. Is there a way that we can keep the old shortcuts instead of "uprgading" to new ones? These shortcuts are pretty much muscle memory at this point, and will cause friction to migrate to multi key'ed shortcuts.

As Chris said, if new shortcuts are rolled to your site, there's no way to 'go back'.
However, there are a couple of feature suggestions related to customizing keyboard shortcuts (I would personally really like this) on which you can drop a vote and set yourself as a watcher:
Our main site is still on the 'old ones', but when I lose the ability to create blog posts with "B" on the keyboard, I'll probably be devastated 😅

I love the way the requester put it, "finger gymnastics" I would have said "twister" (the game). Well, it's nice to see we're not the only ones fretting. I have voted and watched these feature requests.
It's not unreasonable to have different keyboard shortcut templates to choose from or modify at least, just like any IDE (JetBrains', VSCode's, etc.)

Unforutnately there is no option to go back to previous shortcut keys, you can cast your vote on below atlassian documents
We still have single key shortcuts C(Create) M (add comment) and W (watch page) but now others are the multikey shortcuts which is frustarting.
You can follow any one of below suggesstions

There is no option to go to old shortcuts, but as a workaround you can use some keyboard remapping software tools on your local machine to use the old shortcuts key and map them to the new shortcuts

As we've seen recently, change is inevitable. Hopefully this change is one that we'll end up learning to love.
While some of these single-key shortcuts still work, such as c to create a page or l for labels, it's being communicated that these will eventually stop working and will be replaced by the new shortcuts. It's not clear to me when exactly these will stop working.
