How do I hide the entire page tree in a specific space?

You can restrict the top page using page restrictions:

https://confluence.atlassian.com/doc/page-restrictions-139414.html

The view restriction is passed down to the children/descendants, so whoever does not have the view permission that you set will not be able to see the entire tree of pages.
