Write a defect in defects only project from any other project

We would like to write all defects in one defect project only.

When tester is in the one of the test execution project, during execution , when tester clicks on create defect , that create issue screen should have project field value assigned to "Defects_Only" project and tester should not be able to change that. 

Would that be possible?

currently, not yet.

However, I'm aware that other users requested this for Xray on Jira server/datacenter.

I would recommend you to reach out Xray support team and ask for improvement, similar to the one above, or simply vote on that issue.
