The Confluence editing bar provides styles but no way to set the font size of text. Why is that? How can we get this changed?
Welcome to the community! Great question. The way I navigated the issue is to use their different sizing format for Headers.
You are suggesting that we misuse the semantic headers, which is bad practice in HTML.
Isn't Confluence using these semantic headers, the way HTML does, to enhance accessibility and enable assistance technology?
If so, then using headers just to resize text seems counterproductive.

As already stated, the editor currently only supports semantic headers.
Although there is an official request for you to vote and watch (https://jira.atlassian.com/browse/CONFCLOUD-46077), the overall traction on this suggestion does not appear very promising, admittedly. Nonetheless, watching will keep you informed in case something relevant to that topic happens.
