What functionalities are there in the "standard Confluence offering" and what plug ins are available

I am interested to know exactly what functionalities that are available in the standard Confluence offering, as well as what functionalities that can be added on through plug ins. I would also like to know about how one can customise the user interface with own branding etc.

For your own branding, the basics are changes of colour, logo and titles.  You can do more with custom headers and css.  The next step up is to add "themes" which can re-arrange and reskin the Application.  Beyond them, there's a couple of Apps like Refined and Brikit which allow you to create your own themes and menus without having to write code, and then the ultimate option is Themebuilder which lets you get into and customise just about everything.

I want to point out that I work for Adaptavist, and Themebuilder is one of our products.  Despite that, I'd recommend that if the basics are not enough, you should really start with a look at Refined and Brikit.  Themebuilder is more powerful, but you have to commit time to it, learning how it and Confluence work together, whereas Refined and Brikit have less power and hence less complex stuff to learn.
