Hello, in m mobile app i can see randomly the following entry:

Zuletzt angesehen / Recent (Bereich / Area)
"Infrastruktur
Infrastruktur | Anonymous"

Who could be the anonymous user and how could it be disabled?

Sideeffect: This is the cloud 10 user free product plan, but with my id i am additionally registered in my company "hlt" with a license plan, i think in cloud too.

Welcome to the Atlassian Community!

An anonymous user is someone who has not logged in, so you can not identify them.  

Check the space (and global) permissions for anonymous access - you must have allowed them to comment or edit in there.  I've been asking Atlassian to remove anything beyond "read" to anonymous accounts for years, it's utterly useless and no-one wants it.  Read access is, of course, absolutely great.
