I've created a Dropdown field in confiform. It works properly on registration form, but I'm not able to edit the field definition and changes don't save.
It's appearance also seems odd!
what should I do to fix it?

most probably this field has way to many choices registered
and Confluence editor fails to render a placeholder for this field
It makes sense for “select like” fields with many many options to use a different field type - a web service backed field or a database dropdown or a smart field, serving the field options from another form

Depends on a size I guess... We have seen dropdows with 200+ choices doing ok.
Might be something else also. The bug/limitation is on a placeholder functionality, which is rendered by Confluence editor

And if you have a Confluence source editor installed on your instance then you csn try to edit the page in a storage format - https://marketplace.atlassian.com/apps/1210722/confluence-source-editor?hosting=server&tab=overview
