Is there a way that I can send someone a link to review a document, and know whether or not they reviewed it? Can I then also close out that file, like after 5 days if they have not reviewed it?

I assume you are referring to sending a page link to someone to review. In that case, you would need to make sure they have view (and comment if you'd like them to add comments) permissions on that page.
Regarding tracking the feedback, you would be alerted anytime a comment is made on the page. However, since you wanted this to be time bound, I would suggest using the Action Item macro to assign a task to the user you want to provide the feedback so they will have a trackable task.

Unfortunately the use cases you propose are not available out of the box with Confluence. There may be an App in the Marketplace that can accomplish this, but I am not familiar with one.
