My company has some concerns when is about sensitive data on the cloud version.
1.Is there any option to protect sensitive data in Confluence and Jira (cloud version) ?
2.Is there any option to link the Confluence Cloud to an external repository designed only for sensitive data ?
What aproach would be the best ?

Depends mostly on what you mean by "protect sensitive data". Is that on the front end, or are we talking about the server/hardware (encrypted at rest, using SSL for clients, etc)?
You won't be able to relocate Cloud data on an external repository, but there's nothing stopping you linking to external data.
