We've set a standard whereby all pages must be sorted alphabetically. However some users (accidentally or on purpose) move things into a different order,
How can we force Confluence Server to keep all pages sorted alphabetically (without having to do this manually) and prevent users from moving pages around?

I think the only way you can do this on confluence server is by limiting the space admin privileges. There's no specific permission for just the sort function.

If you go to the space permissions, you should see an admin column. Uncheck the members or group you don't want to have access. Only keep the members who will help maintain the space and making sure the page tree structure is maintained.
