I used the "table" to create 1x1 box around my content and filled it (light gray). Look OK but now (not surprisingly) I can't edit the text e.g. unbold. What are my options? Thank you.

When you say you cannot edit the text, why not? In a table text is editable - bold, italic, colors, etc.
