The email attached to the one-and-only Organization Admin of our workspace no longer exists. Therefore, we cannot add another Org Admin nor make critical changes to our workspace.
How can we replace the Org Admin of our workspace without having access to the original Org Admin email?

First of all, our sincere apologies for the delay getting back to you here.
I see that you are an Organization admin for two Organizations already, where one seems to be linked to a site already "po*******ld.atlassian.net". Would that one be the Organization you needed help with?
If not, and this is for another Organization, and the scenario is the org admin is a former employee, but if you own the domain of the email address, we would highly recommend working with your IT team to reactivate the email box, and login as the former org admin to get access to the organization and make the necessary changes there. After that, the email box can be deactivated again.
If this is not possible, could you share more information why it isn't possible, so we can create a support ticket on your behalf with more context, since the next steps would be not possible to be done through this post?

Welcome. It isn't possible through usual means. Only Org admins can make another user an org admin. Raising a request to Atlassian Team to see if there's any done through the support side.
