When I update an app URL subdomain, what happens to my current username?
Do I need to stop logging in with my old org email and begin logging in with my new email address?

When you update your site’s URL subdomain, your Atlassian username doesn’t change – it’s fixed and not something you need to worry about.
Since your organization updated your domain and email, you’ll need to start logging in with your new org email address. All of your content, permissions, and history remain tied to your account, so nothing is lost in the process.
If your company uses Atlassian Access or SSO, make sure your Org Admin updates the managed domain in the Atlassian Admin Console so the transition goes smoothly. After that, just use your new email for login and the new site URL for access.

We don't use SSO, so I could assume the first paragraph is correct for us, and after the sub domain change we can continue to use our existing login ID's? No further action required?

Yes, exactly. With no SSO, you just keep using your existing login ID, and after the subdomain change everything else continues to work as before (just update any old bookmarks to the new URL).
