I renewed my server license through website. I'm putting the license key into my server and it won't recognize or update. I put in the license key, click "Save", the key disappears but nothing updates.

It looks like your updated license is applied - the line Support Period shows that the license that Confluence is currently operating on is good until Jun 23, 2023. This matches the period of support I see on the backend for your October 1st renewal. You should be able to upgrade Confluence at this point, as the updated license is applied.
The large red section on the screen there isn't from the license being out of date, it's from the user count being 35 more users than the 10 user Starter license allows. From the Managing your Confluence License document:
Exceeding your licensed user count
If you exceed the number of users included in your license, your Confluence instance will become read-only, that means no users will be able to create or edit content until you reduce the number of users.

Usually, when you hit "save" in your third screenshot and something goes wrong, you would get an error pop up with some indication of the problem.
It usually does say "read the logs for more" though, and that's still the next step - the next place to look at is the application log in <confluence home>/logs/atlassian-confluence.log
If you can "tail" the log while repeating the attempt to save a new licence key, you should see an error flow up the screen as it tries to read the key you've put in and match it up.
