We have an old Atlassian LaTeX plugin we want users to stop using as there is a new one from a different Vendor (TenSixTwo) that functions much better. However, we have many many pages that were created using the old Atlassian plugin. I do not want to have to change these pages. Is there a way that confluence can continue to use the old plugin to render the content, but not have it available to any future edits? ie remove it from the Insert Menu.

I believe that if you keep the old plugin installed it should continue rendering the content just fine. I mean, you can have both plugins running. But before you need to be sure that it won't conflict with the newest one or vice-versa.
