Is it possible to hide editor and owner details in an article?

Hi is it possible to hide the Owner and editor details of an article when it is set up for anonymous viewers?

Same for last edit or read time.

Hi @Steve Ratcliffe and welcome.

You need an app for that.

We're using Scroll Viewport by K15t for https://docs.emplifi.io/ - Viewport can create a public doc site even from a Confluence space that doesn't have anonymous access enabled and you can set up your own domain and SSO access.

The entire content that you see on our site is authored in Confluence.

There are similar apps in the Marketplace but Viewport is my favorite. And Atlassian are using it for their docs :)

Is it possible to apply the 'theme' if that is the correct term to an existing Space?

Yes. 

You simply open Viewport app and select the source from which to build you doc center.

It can be either a whole space or s so-called Scroll Document - which is a product of another K15t app. Scroll Documents allow you to create subsets of Confluence spaces.

You can set up your domain (no trace of Atlassian in URL), you can define your URL structure etc.

You can modify the theme, apply your own CSS, JS, set up Google Analytics, even support tools chats.

Other apps work similarly, again, the difference is that to make that 'themed' space public, the permissions need to allow anonymous users in. With Viewport, your Confluence space can remain anonymous.
