I have a Google Sheet file which contains two sheets. The first sheet contains a table of master data, and the second sheet uses a formula to filter that data. The filtering is done using a formula and a box where a user can enter a keyword to filter by.
I'd like to display the second sheet on a Confluence page, and without losing any of the functionality.
Is this possible? If so, how?

If you are open to 3rd party apps, we can suggest trying our Table Filter, Charts & Spreadsheets for Confluence app.
You can use the Table Spreadsheet macro and work with Excel-like style right in Confluence without switching to other tools.
Then if you need your users to filter the spreadsheet data without ruining it, you may reuse the required sheet anywhere using the Table Spreadsheet Include macro (the reused data is not editable). On top of this macro you place the Table Filter macro and allow your users to filter whatever they need safely.

There's one more way to embed a Google Sheet on a confluence page - with an iframe macro.
Using a normal share link with the ifram macro allows you to set multiple displaying options - size, scrolling, etc.
It's the example one - the spreadsheet is editable from the Confluence page - and you can see the full Sheet's tool bar
But it's the second option that's very interesting as it allows you to share the spredsheet - without the editing option and Sheet's UI. Any change you made in the spreasheet in Google Sheets will be still visible (or not, you can decide).
You just share the data for viewing, nothing else.
In the File menu in Google Sheets, there's Share > Publish to web option.
You can choose what to publish and the format. Crucially, you restrict access to your company (Emplifi in this case).
The advantage is that you don't have to have a complex permissions/restrictions setup in both Confluence (and the page) and Google Sheets.

Yes, you can do this! Instead of using the Share function in Google Sheets, just copy the URL from your address bar. That's a link directly to the displayed sheet. You won't get the toolbar at the top, but you can use regular filtering.

I may not be following you, but it sounds like you are saying to simply copy and paste the link of the spreadsheet into the body of the Confluence page. When I try that, all it shows me is the URL.

It's not in the tool bar.
Once you select a text, hit Command-K (probably CTRL-K on Windows) paste the link.... and then you'lll see the options on how to display the link.
