Is it possible to EDIT a label so that everything labelled with it will be updated also?

Basically, it is not a built in feature of Confluence. There is a suggestion ticket raised in Atlassian's public issue tracker that you could watch/vote on:

There are also some add-ons you could look at for this:

• For Confluence Server: Label Manager for Confluence
• For Confluence Cloud: Bulk Action Tools
• I think the Confluence Command Line Interface (CLI) add could also be used remove and add labels using something like the method described here: https://bobswift.atlassian.net/wiki/display/CSOAP/How+to+remove+a+label+from+a+set+of+pages
