I would like to create a dashboard for a number of projects in which only critical information are displayed such as when a task slips or a jira blocker issue is raised. How can I do that so it dynamically pick up changes from those pages?

Create a filter that selects the issues you are interested in, then use it in a Confluence page and/or JIRA dashboard.
