How do I create new folders in the sidebar to organize content in my space?
You could create "folder" pages in your space, basically just a simple page that you nest the other pages under.
I will create a page with just the 'child page' macro. then group the pages I want under these pages. However you don't need any content on these pages.
This will create folder-like items in the left-hand page tree. You don't have to use any macro, I just like to have some content on my folder pages.
You can see after I create or move pages under the 'folder' pages, it looks like they are folders in the content section in the left-hand pane.

Agree with including a Child Pages macro on each "folder" page. Besides the Child Pages macro, I typically include a brief explanation (1-2 sentences) to explain why the folder exists and what content should be (or not be) in that folder.

Just to expand on @Shawn Doyle - ReleaseTEAM 's answer, you can use a Child Pages macro on your 'folder' parent pages to automatically generate a list of child pages.
This is really useful when viewing on small screens (mobile devices).
