we just want to make sure this installation method is covered under the server license installation.
also we want to know if we can get a similar image but for Red hat installation or if we would have to create one ourselves.

Yes, you can definitely use our official docker images for Confluence Server. On the upper end of that, we also provide AWS Quickstarts for our Data Center products. If you're looking at scaling up in the future, Data Center is the way to go as it lets you run multiple nodes for high availability, plus many features that are helpful for larger installations.
Our image is based on alpine linux, as it is very lightweight. You can run this image on Red Hat easily - you just need docker running. For clarity, you could run the Confluence docker image on Red Hat, Ubuntu, MacOS... the only requirement to run the Atlassian-provided docker image is that your host operating system can run docker.
To get rolling on Red Hat, there are a couple options:
I don't think it would be necessary to create your own docker image based on Red Hat to run Confluence - unless you have extenuating requirements, the official image should be fine and will happily run on a Red Hat host.
