Trying to create a db in confluence with source data from a Jira query, however, it is only picking a few fields from Jira.
1. Is there a restriction on how many fields Database can have from Jira?
2. How to specify which fields to get from Jira in confluence database?

As for now only a few fields from Jira is imported to the database in Confluence. You can choose to reduce the number of predefined fields but not add additional fields.
The database will not add new work items created in your project to the database either (if you don't re-crate the database in Confluence).
Depending on your use-case maybe the Jira issue macro could resolve your problem instead?
