I am trying to configure Application Link (from Confluence) to Google services, basically to establish a oAuth connection and access Google spreadsheets APIs in particular.

Atlassian's application links are designed to link Atlassian applications together. I found an article on how to connect to Google's sheets API using Python: Browser Quickstart
Please let us know more about what your requirements/use cases are. It may be possible to write an add-on for Confluence that uses the Google API to do what you need. Here is another resource to try for add-on advice.
