Currently the size of text can only be changed through changing the text into a header or other form of font.
I wish for my text to remain normal font, as to not appear in my table of contents, but in a larger size.
I have not found out how this is done in confluence yet and could use some help.

As the others mentioned, natively it's not possible.
There are a couple work arounds. You could choose to exclude certain header sizes from your Table of Contents. That would let you use the native sizing (headers), but not have all of them appear in your TOC.
Another option would be similar to what Kristian mentioned: looking at apps. Aura macros include a title macro you can freely customize in size. (Btw, Aura is sold by the company I work for)

I'm simply scaling Confluence down in my browser window - I think it's 90% and it works for me.
It's a balance among my eyes, screen's actual displayed resolution and the font size.
If you do this for the purpose of modifying the font size for reading only, you can use a theme app from the marketplace.
