I am adding an attachment macro to a confluence page, which I am planning to open up to provide release notes to clients. The attachment macro works great except for the fact that it shows the person who uploaded the attachment

There may be a Marketplace App that can solve the issue for you, but I am not familiar enough with any that will do what you are looking for.

It is not the end of the world. I can check if there is a way that I can add a normal table and have the attachments as inline items maybe?

I do that all of the time. Create a table, link the attachments in the column. It's manual, but does create a nice presentation.
