I have lots of various pages with tons of technical information specific to each project. I would love to have one page that is an overview of all projects with high level info (ex., title, people, status, etc.) that's easy to see at a glance, but I don't want to update in two places. Can I identify certain bits of copy/text on various pages via macros to feed into/populate to another page with the high level list?
If Excerpt is not serving your needs. You might want to try using the Page Properties and Page Properties Report Macros.
If you have a lot of pages already set up, it might take a while for you to get it all set up, but you can control what data you display.

Yes, you can do this using the excerpt macro on each project page and then on the overview page you use the excerpt include macro to display the information.

Great! How do I get the macro to include just the text I want in a table? right now when I insert the excerpt macro, it just drops randomly on the page. Thanks!

You cannot embed the built-in excerpt macro in a table, instead you would have to use an app for it, Table Filter and Charts for Confluence, which looks like it can do what you are looking for.
