Can I change the server base URL I've set up in a trial version once I've moved to a paid one?

Hi,

I was playing with the trial version of confluence to show the benefits of the product to my team. We've decided to upgrade to a paid version and I would like to know if I can change the server base URL I initially set up in the trial version once the paid licence starts?

No.  You can't change the URL directly.  You have to trial and buy a new system on a new URL, then, if you want to keep any data from the old trial, export it, adn import it into the new system.  Then you can simply let the old trial lapse.
