Using Epics on an old project

We have a project which we have been using for a long time for our product. We're now managing the project in a more kanban style, and are thinking about adding epics and stories to our project. I enabled "Epic" as an issue type, but am finding that there are required fields, like "Epic Name", is not on our "Create Issue Screen".

I'm wondering if we'd be going down a rabbit hole trying to take our current project, and adding epics and stories.

Does anyone have experiences they would like to share in taking a long running older project, and adding agile features?
