Atlassian have suggested we use Jet to assist in some work we are doing . However before we do so , what assurances do atlassian provide regarding the security and trust of the application . We will use the Data Centre version. Where is any data produced or consumed by the application stored ? As this is not an atlassian product ( sorry if im incorrect here )  , what testing has been carried out by atlassian to assure customer data security

On Server and DC, Jet is implemented as a "plugin" - it runs within Jira, uses the database under your installation for storing its data, and makes no calls out to external systems.

Jet is an Atlassian "product", in the sense that it's a couple of apps that they write and maintain (a couple because the server/dc and cloud apps are different), but it's not usually referred to as an Atlassian product because it's not a standalone application like Jira, Confluence, Align, Crowd, etc.
