I am part of using a board together with a team.
One team member has the main access (not sure about the right terms).
If she decides to quit Trello, dies or whatever. What happens with my access to the board then. I loose all information?

Sounds like the team member is admin of the board. When someone leaves the company (in what way ever) there are several ways described here.
What would be best is having at least two admins in the Team/Board. If the other member just quits Trello (without being the admin) there is nothing to worry about - you won't lose anything. But you should check out admin rights definitely.
